Terung Goreng Cili Garam (Cili Garam Fried Eggplant)

Ingredients:

  • 2 medium sized Eggplants, make sure its young & fresh
  • BibikJee's Cili Garam
  • Cooking oil for frying
  • Spring onion strips

Steps:

  1. Cut the eggplants lengthwise into 2 thick strips.
  2. Use a small sharp knife, score the eggplant in a criss cross pattern making sure not to cut too deep otherwise it will break apart in the pan.
  3. Heat up oil in pan or wok, medium to high heat.
  4. Sear the eggplant, with the scored side down first. Fry until the eggplant turns brown, soft with slight crisp.Fry the other side as well.
  5. Drain the oil and plate the eggplants.
  6. Heat up 4 tablespoons of Bibikjee's Cili Garam, on low to medium heat for 1-2 minutes.
  7. Drizzle the Cili Garam all over the brinjal and garnish with some spring onion strips.
